Powderhorn Mountain Resort is excited to present a food and wine pairing event in collaboration with Colterris Winery, located in Palisade, CO. This exclusive culinary experience features expertly crafted dishes, paired with Colterris wines, to elevate the best of the season’s bounty.
Our menu celebrates the flavors of the Grand Valley, sourcing fresh greens and vegetables from Green Junction Farmstead, honey from Palisade, and chicken from Red Bird Farms, known for their cage-free, antibiotic-free, hormone-free practices. Our wild-caught black sea bass is sustainably managed, and responsibly harvested.

Course #1 Endive with Whipped Goat Cheese, Smoked Trout, Pickled Onion, and Dill. A delightful small bite featuring crisp endive with a sweet, nutty flavor, creamy whipped goat cheese, tender smoked trout, and the refreshing brightness of fresh dill and pickled red onion.
Course #2 Solstice Salad. This vibrant salad combines tender herbs of mint, basil, and parsley, mixed with fresh raspberries, baby spinach, and lettuce greens, all adorned with edible flowers and drizzled with a lavender vinaigrette. A feast for the senses—both visually and in taste—this “Incredible Edible Flower Salad” is a celebration of summer’s freshness.

Lemon Dukkha-Crusted Sea Bass. Baked Parmesan Yellow Squash served with sautéed zucchini, cherry tomatoes, red onion, garlic, and fresh basil, topped with a horseradish-spiked pistachio “cream.” Dukkha—a rich blend of nuts, seeds, and spices like coriander, cumin, and cayenne—infuses the sea bass with bright, summery flavors that harmonize beautifully with the vegetable medley.

Lemon Honey Dijon Grilled Chicken. A juicy, flavorful grilled chicken breast, perfectly seasoned with lemon and honey Dijon. This dish is paired with a sauce made of lemon butter, Dijon mustard, and a splash of wine, capturing the essence of summer in every bite.
Course #4 Vanilla Bean and Orange Zest Panna Cotta, Garnished with Candied Orange and Lemon Peel. A creamy, dreamy panna cotta infused with vanilla bean and orange zest, topped with candied citrus peel and complemented by a blackberry coulis flavored with black currant juice and rosemary. A sweet and refreshing finale to the evening.
